Now talk about an easy, healthy, weeknight dinner. This three ingredient pesto stuffed chicken was so good and there wasn’t much to it.
What you’ll need for 4-6 servings:
- 3 chicken breasts
- Low-fat mozzarella
- Preheat the oven to 400F
- Cut a slit into each chicken breast that does not go through the back – almost like a pocket (a pesto pocket lol)
- Place the pesto in the pockets and do your best to close up the chicken again. It’s okay if it’s messy and stuff falls out, it’ll still taste just as good
- In a hot skillet, go ahead and cook the chicken for 5-10 minutes on each side (depending on how thick the cut is)
- Cut up the mozzarella and place it on the chicken. Throw the skillet in the oven until chicken is cooked through and the cheese is melted ~10 mins
This is such a simple meal if you don’t have much time on your hands but still want something tasty. Plus it’s pretty healthy depending on what kind of pesto/cheese you’re using!
